Salmon's Leap cocktail

Black Bush Irish Whiskey
The featured spirit in this month’s signature serve is Black Bush Irish Whiskey.

Salmon’s Leap
30ml Black Bush
20ml Sherry
15ml Lime juice
15ml Sugar syrup
2 Muddled strawberries

Method
Combine all ingredients.
Add muddled strawberries.
Dry shake, then shake over ice.
Double strain into coupe.

“Black Bush is finished in a sherry cask, so I brought the sherry in just to complement that,” says Lindsay. “The lime juice, sugar syrup and aroma of strawberries add sweetness, so it’s a very light and refreshing cocktail.”

About the bartender
In a pleasing parallel for this month’s Cocktail of the Month, both Lindsay and Black Bush hail from Bushmills. Lindsay has been working in the trade for around seven years, starting off when he was 16 as a barback in his uncle’s establishment, and progressing to bartending when he was 18. The experience served him well during travelling stints. “It’s a great job to take around the world with you, you can work anywhere,” he says. “I worked in a few different bars over in Australia and New Zealand, dipping in and out of it but always coming back to it.” During one return to Belfast, he worked in the Points and then, returning again six months ago, he started in White’s Tavern. “It’s a very sociable job,” says Lindsay. “You meet a lot of people, and especially with sports events and things like that, it brings out the best in people.”
