Cocktail of the Month with The Kraken Black Spiced Rum
In the latest of a regular series, we ask local bartenders to showcase signature serves featuring the superb premium spirits brands presented by Proximo. Charlie McHenry, bartender at Sweet Afton, creates a cocktail featuring The Kraken Black Spiced Rum.

The Kraken Black Spiced Rum
The featured spirit in this month’s signature serve is The Kraken Black Spiced Rum. The Kraken® Black Spiced Rum is an imported rum from the Caribbean blended with secret spices. Named for the sea beast of myth and legend, The Kraken Black Spiced Rum is bold, rich, black and smooth.
35ml The Kraken Black Spiced Rum
15ml Maraschino Liqueur
15ml St Germain Elderflower Liqueur
50ml Grapefruit juice
20ml Lime juice
1 egg white
Shake ingredients over ice, followed by a dry shake, strained into a highball glass and garnished with a dehydrated grapefruit.
“I like sour drinks and thought it would be good to do something with The Kraken as there hasn’t been as much innovation in rum-based cocktails recently,” says Charlie. “Everyone seems to be going for fruity cocktails, so it was nice to create one with a bit of a kick and sourness to it.”
About the bartender
Charlie started out in the trade back in his hometown of Ballycastle on the North Coast, “just in an old man bar pulling pints and serving whiskeys,” he says. A few years ago, he moved to Belfast and has worked for the Bacchus Group ever since, initially in The Perch. “I started getting into the classic cocktails like the Old Fashioned and French Martini, and getting a real passion for cocktails,” he says. “Then I asked my manager if I could move down and see how it was done in Rita’s with the high-end cocktails. In Rita’s, I continued learning my trade and getting better at it and talking to customers.” Providing a high level of service and creating Instagrammable cocktails has become a point of pride for Charlie. “Every day you’re learning something new or meeting someone different who can teach you a few things,” he says. “Our management team is great and they’re always trying to make us better.”
