In the latest of a regular series, we ask local bartenders to showcase signature serves featuring the superb premium spirits brands presented by Proximo. Felipe Sanchez, bar manager at The Ava, Bangor, creates a cocktail featuring The Kraken Black Spiced Rum.

About the bartender
Starting out in the trade as a glass collector in an Edinburgh nightclub, Felipe worked his way up to bartender, supervisor, assistant manager and finally manager of the venue. Having decided a nightclub environment was not for him, but he enjoyed the creativity of making cocktails, he moved to Amicus Apple just off George Street.

“This place was well known for its cocktails and they took pride in making them,” says Felipe. “I learned under some of the best people working today, and they’re all off being brand ambassadors, have their own drinks companies or have set up bars in London.” Working his way up to bar manager, Felipe stayed at the bar after it acquired new owners and was renamed The Boozy Cow.

“There was lot of prep work and I learned how to use all these different machines, techniques and infusions; all the tricks of the trade,” he says. “Edinburgh started off as quite a small scene, and then it grew dramatically and you found you were always asking what’s next and trying to do the next big thing.” Having travelled to Northern Ireland for many years to visit his girlfriend, Felipe eventually moved here three years ago, figuring his bartending skillset was more portable and he was right.

He moved over on a Friday evening and began work at The Old Inn in Crawfordsburn the following morning. While enjoying the historic setting, atmosphere and family owners, after a year and a half Felipe was ready to get back into the creative side of cocktails and moved to The Ava. At the Bangor bar, he has been creating a new cocktail menu every season. “I like pushing boundaries and seeing if I can change people’s perceptions,” he says.

The Kraken Black Spiced Rum
The featured spirit in this month’s signature serve is The Kraken Black Spiced Rum. The Kraken Black Spiced Rum is an imported rum from the Caribbean blended with secret spices. Named for the sea beast of myth and legend, The Kraken Black Spiced Rum is bold, rich, black and smooth.

The Capsize
50ml The Kraken
25ml Ruby port
25ml Double cream
1 dash chocolate bitters
1 whole egg

Method
Crack egg into tin, shake to emulsify egg
Add remaining ingredients, shake with ice
Double strain into glass
Dust with chocolate & nutmeg

“I’ve taken a flip and reinvented it,” says Felipe. “and it fits in with the whole theme of the Kraken sea monster going after ships and overturning them. I wanted something that was quite warming and hate waste so, instead of just using egg white, I went for the whole egg.”
