Belfast mixologist wins Caorunn Gin cocktail competition for Ireland

Mark of cocktail bar and restaurant Shu, Belfast creating his winning Caorunn cocktail ‘Five n’ App’

Mark Velasquez, of Belfast cocktail bar and restaurant Shu, has been named the Ireland winner of a prestigious Caorunn Gin cocktail competition run in partnership with the renowned Difford’s Guide.

The ‘High Five To Gin’ concept of the competition saw a staggering number of mixologists from 24 countries submit their cocktail creations using a maximum of 5 ingredients.

Mark won over the judges with his apple flavour inspired cocktail creation, ‘Five n’ App’, that will appear in a special book produced in conjunction with Difford’s Guide, the world’s definitive cocktails, bartenders, bars, beer, wine and spirits information directory.

Mark expressed how he “wanted to create a cocktail that will look and taste like a freshly squeezed apple juice, highlighting the uniqueness of the Caorunn gin and its versatility using unusual ingredients that would complement the gin’s botanicals such as Fennel seeds.”

His inspiration for his creation, he admits, “is none other than the unique and traditional ingredient of Caorunn which is the Coul blush apple.”

Mark adds, the name for this winning masterpiece, ‘Five n’ App’ gives “emphasis to the five ingredients and the newly created apple-flavoured cocktail.”

Mark will receive a signed copy of The Caorunn Cocktail Collection 2018 book, alongside a gift from the brand when it is launched during London Cocktail Week (1-7 October 2018).

Five ‘n App
45 ml Caorunn gin
1 small teaspoon fennel seeds
25 ml fresh lemon juice
20 ml homemade pomegranate syrup
2 drops Saline solution (20% Salt, 80% water)

in a cocktail shaker:
muddle 1 small teaspoon of fennel seeds
Pour 45ml of Caorunn gin,25 ml fresh lemon juice, 20ml homemade Pomegranate syrup.
2 drops of Saline solution (20% salt, 80% water)
Shake vigorously with 5 oz coupette glass
Garnish – speared dehydrated apple slice
