Abi from Barnardo’s NI bakes cake with celebrity chef for charity’s 150th anniversary

Barnardo’s care leaver Abi Ajetunmobi recently baked a special cake under the guidance of celebrity chef Rosemary Shrager to mark Barnardo’s 150th anniversary.

Rosemary and her team, including top pastry chef Marc Mouzon mentored Abi in making the stunning cake at the Rosemary Shrager Cookery School in Tunbridge Wells, Kent.

The finished cake was delivered to Buckingham Palace for a Barnardo’s garden party hosted by the charity’s President, HRH Duchess of Cornwall.

Abi from Belfast trained in cookery and baking while she lived in Barnardo’s NI supported accommodation and currently works for French Village bakery in Belfast.

Abi said: “What an amazing day. It was very long days making the cake with 4am starts but the end result was fantastic. I have learnt so much from Rosemary and Marc, I can’t even take it all in properly. To get to meet the Duchess was so great and she was really lovely about the cake. I just want to thank everyone so, so much for putting it all together and for Barnardo’s for picking me. The whole experience is a memory I will never forget.”

Celebrity chef Rosemary Shrager said: “I am passionate about giving young people opportunities. It is so important for me, young people are the future, which is why I run my school. When Barnardo’s approached me to work with Abi, who is already an incredibly talented and passionate baker – how could I possibly say no?”

Lynda Wilson, Director Barnardo’s NI said: “We are just all so proud of Abi. It was a real showstopper of a cake. She worked incredibly hard to bake and decorate it along with our staff member Lesley Dobson from our Dr B’s Kitchen in Belfast and what they produced was amazing. I have never eaten a cake like it, it was absolutely delicious and worthy of such a prestigious event.”

The cake was a lime and lemon flavoured genoise sponge with an apple marshmallow filling, a blackcurrant buttercream made with Italian meringue filling and a lemon mousse filling, untop was a strawberry marshmallow and lime jelly and it was decorated with strawberry macaroons and chocolate dipped strawberries.
